My attempt of recreating the amazing Kale salad from Wolf in Sheep’s Clothing in Venice.
1 Bunch of Kale (dark kind with rib center)
Remove the rib from each kale leaf
Use a shredder, processor or just finely chop the kale leaves
1/2 cup of Sheep’s Milk shaved Manchego cheese (Wholefoods can shave it for you)
1 cup of Majhool dates (make sure to remove the pits before chopping)
1/2 cup of chopped or walnut halves
2 Tablespoons of Walnut oil
2 Tablespoons of Fig Balsalmic Vinegar
1 Tablespoon of Dijon mustard
Garlic powder, sea salt and pepper to taste
Throw in a large mixing or salad bowl and toss. Then take a little extra cheese for a nice topping.
OPTIONAL: homemade baked croutons
Homemade Organic Rosemary Popcorn
1/2 cup of organic popcorn
3 tablespoons of Olive or Coconut Oil
Sea Salt to taste
Garlic Powder
Dried or Fresh Rosemary
55 calories in one cup
Makes 15 cups
On high heat make sure oil spreads all over the bottom of the pot
Throw in 3 kernels, once they pop, throw the rest in.
Place the lid and shake until all the kernels pop.
Be careful to not burn or over cook.
Add salt, garlic and rosemary. Voila! Yummmmy snack.
